Lemon Bread

Ingredients

3 1/4 cups all purpose flour (or bread flour)

2 3/4 cups granulated sugar

1 3/4 cups high-quality olive oil

1 3/4 cups coconut milk

Juice of two large lemons

2 tbs lemon zest

4 eggs (room temperature)

1 1/2 tbs baking powder

1 tsp baking soda

1 tsp Himalayan sea salt

Directions

  1. Preheat oven to 350° degrees

  2. Grease 2 9”x5” pans with coconut oil and lightly dust with flour 

  3. Grate zest of lemons

  4.  Juice lemons (approx. two whole lemons)

  5. Combine lemon juice, zest, olive oil, milk, and eggs. Mix until combined

  6. In a separate bowl, whisk flour, granulated sugar, salt, baking powder, and baking soda together

  7. Using a hand mixer, add flour mixture to wet ingredients one scoop at a time and mix until fully incorporated 

  8. Pour half of the mixture into one pan and half into the other

  9. Bake, uncovered for 45 minutes to 1 hour (until toothpick comes out clean)

  10. Let cool for 20 minutes

  11. Use garnish of your choice
