Bánh mì (Vegan)

Ingredients

1 bunch cilantro leaves

1 julienned cucumber, (optional to remove skin)

Homemade pickled daikon/carrots

1 container of tofu, drained, sliced, and fried

Demi baguettes (quantity based on how many people you’re serving)

Sliced jalapeño or fresno pepper

Kewpie mayo, siracha, Japanese bbq sauce

Oil of choice, for frying tofu (optional to bake instead)

Directions

  1. Drain, slice, and dry tofu for 15-20 min (using paper towels/tea towels/something to place on top to add weight)

  2. Heat a medium-sized saucepan with frying oil. Add tofu when hot. Fry on both sides 

  3. Place tofu on a cooling rack, while cooling slide all your veggies and bread

  4. Dress your sliced bread with condiments of choice, and add jalapeños to one side. Add tofu to the other side, and top with pickled veggies, cucumber, and cilantro

  5. Serve and enjoy
