Sunday Red Sauce

Ingredients

1 medium chopped yellow onion

2-4 cloves garlic, minced

2 6oz cans tomato paste

2 28oz cans peeled tomatoes

1 tbsp each salt, dried oregano, dried parsley

1 tsp dried basil

3/4 tsp red pepper flakes

1/2 tsp granulated sugar

Optional: One packet hot Italian sausage

Directions

  1. Chop & mince onion and garlic, sauté onion on medium heat and add garlic once onion is golden, sauté for another minute

  2. Once golden, add 2 cans of tomato paste. Cook for 2 minutes

  3. Meanwhile, add 2 large cans of peeled tomatoes & spices to blender and blend until smooth

  4. Add mixture to your pot

  5. Fill one of the large tomato cans with water and add to pot

  6. Bring to rolling simmer then cover and reduce heat to medium low

  7. Cook for 3-4 hours, stirring occasionally

  8. If using sausage, pan fry until cooked through and add to sauce in the last 10-15 minutes

  9. Service with crusty bread and noodle of choice
