Red Curry

Ingredients

1 pound fresh, raw, deveined shrimp without shell (optional)

3 cups chopped bok choy

1 yellow or orange pepper chopped

2 tbs fresh gingers

3 garlic cloves, chopped

2 cans coconut milk

1/4 coconut oil

1/2 yellow onion, chopped

2 tbs red curry paste

1 cup rinsed basmati rice

Salt & pepper to taste

Directions

  1. Heat coconut oil in a large stock pot

  2. Once hot, add ginger, onion, and red curry paste. Sauté 

  3. Add garlic once onion & ginger are sautéed (onion will be translucent)

  4. Add both cans of coconut milk

  5. Let ingredients come together at a simmer approx. 10 minutes

  6. Reduce heat, add yellow pepper simmer for 1-2 hours

  7. Start the rice: place in 2 cups water, once at a boil, cover and cook for 20min

  8. Add in bok choy & shrimp, and cook until the shrimp is done

  9. Plate rice, serve curry on top
