Polenta Shrimp Bites

Ingredients

1/2 pound raw, deveined shrimp without the shell

1 package 18oz polenta

1/2 cup olive oil

1 cup fresh basil leaves, whole

1 package fresh mozzarella balls

1/2 cup fresh pesto

Shrimp Paste Ingredients

1 roasted red pepper

1 small serrano pepper

1 inch ginger

3 garlic cloves

Salt & pepper to taste

3 tbs high quality olive oil

Directions

  1. Blend shrimp paste ingredients and marinate shrimp for 1 hour

  2. Slice mozzarella balls in half, set aside

  3. Slice polenta 1/2 inch thick

  4. Heat large cast iron or stainless steel pan

  5. Heat olive oil, and add the polenta. Fry on both sides

  6. While polenta is frying, sauté or grill shrimp

  7. Set polenta aside once done

  8. Top polenta with a light scoop of pesto, and add mozzarella balls & shrimp

  9. Top with fresh basil leaf and drizzle high quality olive/chili oil
