Zucchini Bread

Ingredients

3 eggs

1 cup high quality olive oil or coconut oil

2 cups granulated sugar

2 tsp vanilla

2 1/2 cups grated, unpeeled, uncooked zucchini

1/2-1 cup chopped nuts, optional

3 cups flour (bread or all purpose)

1 tsp Himalayan sea salt

1/4 tsp baking powder

3 tsp cinnamon

1 tsp baking soda

Directions

  1. Preheat oven to 325°

  2. Lightly grease two floured 9”x5” bake pans

  3. Mix all dry ingredients

  4. Beat eggs, sugar, oil, and vanilla 

  5. Blend wet ingredients with dry ingredients, once combined stir in nuts and zucchini

  6. Pour mixture into both baking pans

  7. Bake 1 hour or until toothpick comes out clean
