Vegan Brownies
Ingredients
2 medium sweet potatoes
12 dates
1 cup nuts, chopped (walnuts, pecans)
3 tbs maple syrup
1 tsp high quality cinnamon
4 tbs war cacao
1 tsp vanilla
1/2 tsp Himalayan sea salt
1 cup buckwheat flour
Vegan vanilla ice cream
1/2 cup sliced strawberries, for garnish
Directions
Preheat oven to 350° degrees
Peel, chop, and steam potato approx. 30 minutes
Allow potatoes to cool
Blend dates and sweet potatoes, transfer to a medium mixing bowl
Hand mix in the rest of the ingredients
Place & spread in a brownie pan
Bake for 30-45 minutes
Serve with sliced strawberries & vanilla ice cream
