Mid-Summer Salad

Ingredients

Lettuce of your choosing (frisée, romaine, etc.)

2 cups cabbage, thinly sliced

Golden beat, quartered and sliced

3 radishes, thinly sliced

Handful mint, chopped

Handful cilantro, chopped

1/4 cup purple onion, thinly sliced

Juice of half a lime

1 tablespoon tahini

4 tablespoons or more high-quality olive oil

Salt & pepper to taste

Juice of half a lemon

1/4 cup roasted, unsalted sunflower seeds

1/4 feta

  • optional: fried shallots

Directions

  1. Wash and chop lettuce

  2. Blend tahini, olive oil, salt and pepper, and lemon juice

  3. Mix cabbage, cilantro, red onion, lime juice, 2 tablespoons of olive oil, and salt and pepper (optional: add sliced Aji pepper or jalapeño)

  4. Arrange lettuce on plates. Add cabbage mixture, beets, radishes, mint, sunflower seeds, and feta

  5. Drizzle dressing overtop with an extra sprinkling of olive oil
