Mid-Summer Salad
Ingredients
Lettuce of your choosing (frisée, romaine, etc.)
2 cups cabbage, thinly sliced
Golden beat, quartered and sliced
3 radishes, thinly sliced
Handful mint, chopped
Handful cilantro, chopped
1/4 cup purple onion, thinly sliced
Juice of half a lime
1 tablespoon tahini
4 tablespoons or more high-quality olive oil
Salt & pepper to taste
Juice of half a lemon
1/4 cup roasted, unsalted sunflower seeds
1/4 feta
optional: fried shallots
Directions
Wash and chop lettuce
Blend tahini, olive oil, salt and pepper, and lemon juice
Mix cabbage, cilantro, red onion, lime juice, 2 tablespoons of olive oil, and salt and pepper (optional: add sliced Aji pepper or jalapeño)
Arrange lettuce on plates. Add cabbage mixture, beets, radishes, mint, sunflower seeds, and feta
Drizzle dressing overtop with an extra sprinkling of olive oil
