Sweet Potato Avocado 'Toast'

Ingredients

1 Hannah sweet potato, sliced 1/2 inch thick

1 avocado, sliced thin

1 tsp sesame seeds

Olive oil

Salt & Pepper

1/2 tsp nutritional yeast

Hot sauce of choice

Lemon juice

Cayenne pepper

Directions

  1. Preheat oven to 375° degrees

  2. Slice sweet potato. Season with cayenne, salt, and pepper.

  3. Finish with olive oil on both sides. Place on cookie sheet

  4. Bake 20-25 minutes or until potatoes are soft 

  5. Plate potatoes, add slices of avocado, drizzle with olive oil, hot sauce, lemon juice

  6. Top with nutritional yeast and sesame seeds
