Collard Greens

Ingredients

Two whole bunches organic collard greens

4 slices raw bacon

1 onion, quartered

4 garlic cloves, peeled and whole

Broth of choice (water, chicken broth, vegetable broth)

Cayenne, salt, pepper, other seasonings of choice

1/4 cup chopped raw onion

Apple cider vinegar

Directions

  1. Add broth to a large pot (leave an inch or so of space from the top) and turn the heat on high

  2. Wash each leaf of the collard green and rip with your hands. Add to pot

  3. Chop onion, peel garlic add to pot

  4. Rip bacon into 3-inch or so pieces, add to pot

  5. Bring to a boil, reduce heat and simmer for up to six hours

  6. Remove from heat and toss bacon, onion, and garlic in the trash (or repurpose as you wish, you can eat these pieces also)

  7. Optional: Top with raw chopped onion and a splash of apple cider vinegar

  8. Serve as a side dish or in a mug
