BLT Sandwich (Vegan)
Sandwich Ingredients
1 pack smokey tempeh (Lifelite)
1/2 heirloom tomato, sliced
6-8 leaves butterhead, romaine, or arugula lettuce
1 bunch fresh basil
1 tbs lemon juice
1/2 cup Veganaise
Vegan bread or bread of choice (rye, sourdough)
Sweet Potato Fry Ingredients
1 medium sized sweet potato
Olive oil
Cayenne, cinnamon, pepper, salt, garlic powder, onion powder, smoked paprika
Sweet Potato Directions
Preheat oven to 375°
Wash, pat dry, and thinly slice sweet potato (to resemble a thick-cut fry)
Place in a bowl, cover with olive oil and spice mix
Grease a cookie sheet lay fries out
Bake 30-45 min or until desired tenderness
Sandwich Directions
Combine chopped basil, lemon juice, pepper, salt, and Veganaise in a bowl. Set aside.
Add olive oil to a pan, and cook tempeh as you would bacon
Slice tomato, prep lettuce
Combine ingredients on toasted bread
