Sourdough Bread (In a Pinch)

Ingredients

4 1/2 cups organic all-purpose flour or local flour of choice

1 Tbs Himalayan sea salt

1 3/4 cups warm water 105° (+ more for dry spots if needed)

1 packet Platinum by Red Star Instant Sourdough Yeast

Directions

  1. In a bowl, combine flour, a packet of yeast, and salt

  2. Warm the water. Slowly pour water in, and mix with a wooden spoon

  3. Combine thoroughly. Add more warm water slowly if seeing some dry spots

  4. Cover with a damp tea towel, and set aside on the counter for two hours

  5. Lightly dust a working surface with flour set the dough out, sprinkle some flour on the top and fold the sides of the dough so the dough becomes round

  6. Set back in the bowl, cover (with the same tea towel), and let rest on the counter for another hour

  7. 30 minutes before the hour is up, place a steel pot or dutch oven with lid in the oven (cold) and heat the oven to 500° heat for 30 minutes

  8. Remove the steel pot/dutch oven, and reduce heat to 425°

  9. Place parchment paper inside and dust bottom with flour

  10. Set dough on the parchment paper in the pot, cover

  11. Bake at 425° for 30 minutes, then remove the lid and bake for 15 minutes

  12. Pick up via parchment paper and set on a wire rack to cool

  13. Serve & enjoy
