Pickled Shallots

Ingredients

Two large shallots, sliced

3/4 cup red wine vinegar

4 tbs granulated sugar

Pinch of salt

2 cardamom seeds

Directions

  1. Peel the skin off of the shallots, slice

  2. Add red wine vinegar, salt, and sugar to a saucepan on medium-low heat stir as it simmers until the sugar dissolves

  3. Turn off the heat, add in shallots, and cover for 30 minutes or until shallots cool completely

  4. Store the entire contents of the saucepan in a glass jar in the fridge for up to a week
