Winter Salad

Ingredients

1/2 one butternut squash, or winter squash of choice. Cubed

2 tsp cornstarch

1/4 crumbled block feta

1/4 cabbage head, sliced

1/2 jalapeño, cubed

1/2 cup chopped cilantro

1/4 cup purple onion, sliced

1/4 cup sunflower seeds

Salt & Pepper to taste

1 head red leaf lettuce

1 carrot, sliced

1 golden beat quartered and sliced

1/2 cup seasonal micro greens (optional)

Directions

  1. Heat oven to 350°. Place cubed squash in a bowl and toss in olive oil, chili oil, salt, pepper, garlic powder, curry powder, and 2 tsp of cornstarch

  2. Place on a cookie sheet with olive oil. Bake for 45 minutes, flip half way through

  3. Place all ingredients in a large bowl, combine and mix in immunity dressing. Add olive oil as needed
