Spring Salad

Ingredients

1 cup cooked quinoa

1/4 cup feta

Olive oil

Juice of 1/2 a lemon

1/4 cup sprouted sunflower seeds

1/4 cup pickled onions

1/2 large cucumber, chopped

1/2 can garbanzo beans, drained

Salt and pepper

Micro green, amount of choice

1/4 cup chopped mint

Directions

  1. Combine all ingredients in a bowl

  2. Finish with olive oil and lemon juice
