Broccolini & Chicken Pasta

Ingredients

Bunch of broccolini, roughly sliced & chopped

1 shallot, chopped

3 cloves garlic, smashed

1 cup chopped rotisserie chicken/leftover roast chicken

Salt, pepper, cayenne, and garlic powder to taste

Juice of 1 lemon

Optional: Cajun seasoning

2 tbs sherry

Olive Oil

High quality butter

1/2 cup or more of grated parmesan

Noodle of choice (I recommend: fusilli)

Directions

  1. Heat a large saucepan on medium and add olive oil and butter. Roughly chop and slice broccolini and add to the warmed pan. Sauté for a few minutes 

  2. Add shallot, garlic, salt, pepper, cayenne, and garlic powder, half of your lemon juice, and cajun seasoning (optional), mix

  3. Sauté and start boiling water for the pasta

  4. While the water is boiling, add the rest of the lemon to the broccolini pan, season as needed

  5. When noodles are almost al dente, add chicken, cajun seasoning (optional), or other spices to taste. Reserve 1/4 cup of pasta water

  6. Strain pasta, add to broccolini pan along with parmesan and pasta water, mix and serve
