Summer Curry (Vegan)

Ingredients

Rice of choice

1 small white onion, chopped

2 cloves garlic, chopped

1/2 tbs ginger

1 can drained garbanzo

1 can coconut milk

1/4 chicken or veggie broth

Garlic powder, cumin, s&p

1+ tbs curry powder

1 tsp turmeric

Red pepper flakes to season

Leafy veggie of choice

Directions

  1. Sauté garlic, onion, ginger 

  2. Add in drained garbanzos and sauté for a min. Add an entire can of coconut milk, broth, and seasonings. Simmer while your rice cooks

  3. Taste throughout, continue to season as flavors come together

  4. When rice is ready, turn off the curry burner, add in your leafy green. Serve with chili oil on top
